LETTUCE make dinner

A high protein, low carb, easy weeknight dinner...That is my kind of go-to meal. During the week, I really focus on the healthy, low in carb, low in calorie meals because we like to indulge and eat out on the weekends. Life's all about balance. I love these easy Thai lettuce wraps so much so that I make them every other week. Not only are these delicious, skinny and easy to make but also super affordable!
The grocery list all purchased at Aldi:
1lb ground turkey
2 cloves garlic
1/4 red onion
1 red pepper
1 head of lettuce
1/2 zucchini
Thai chili sauce
Wasabi sauce
Buffalo Wild Wings Asian Zing sauce
Red pepper flakes
1 can water chestnuts

First, brown the ground turkey in a pan and drain the fat. Set aside. Chop the 2 cloves of garlic and 1/4 of the red onion and set aside. Next, chop the red pepper and zucchini and set aside. Turn your pan on high heat with 1 tablespoon of olive oil and saute the garlic, red onion, zucchini and red pepper.

Next add the ground turkey and mix through. Add the water chestnuts.

Now comes the sauces. Add the Thai chili sauce (about 1/4 of the bottle) and 2 teaspoons of the red pepper flakes. Mix through.

Wash the lettuce cups. Cut the stem of the lettuce off and try to peel each lettuce cup apart from the rest. This is by far the hardest part. Sometimes they rip or it gets split in the middle. Just do the best you can. All else fails, you can make it into a knife and fork meal and it's just as yummy!

Now it's time to plate them. I usually eat two small lettuce wraps and my husband eats two of the larger ones. Place about 1/2 a cup of Thai turkey mix into each lettuce cup and top with Asian zing and wasabi sauce to your desired heat level. And enjoy! Bring extra napkins to the table because things can get little messy.
